On Day 8 of our Christmas Countdown, we're rolling out Russian Tea Cakes, a classic holiday dessert. These melt-in-your-mouth cookies, also known as Snowball Cookies, are rich with butter and nuts, and covered in powdered sugar.

Instructions

Step 1
Preheat your oven to 350°F (175°C).
Step 2
In a mixing bowl, cream together butter and 1/2 cup powdered sugar until smooth. Stir in the vanilla.
Step 3
Mix in flour and salt until the dough comes together. Fold in the chopped nuts.
Step 4
Scoop and roll the dough into 1-inch balls, and place them on a baking sheet lined with parchment paper.
Step 5
Bake for 10-12 minutes, just until the bottoms of the cookies start to brown.
Step 6
Remove from oven and cool slightly. While still warm, roll the cookies in additional powdered sugar.
Step 7
Once cooled, roll them in powdered sugar again for a snowy look.
