Instructions

1. In a large Dutch oven over medium-high heat, melt the butter and then add the onion, carrots, and celery. Cook, stirring often until the onion is tender, about 5 minutes.

2. Add the pulled rotisserie chicken, salt, thyme, ground black pepper, and cayenne pepper. Stir to combine well.

3. Add the garlic and continue to stir. Cook until the garlic is fragrant, about 30 seconds.

4. Sprinkle the flour over the chicken and vegetables and stir until everything is well coated.

5. Pour in the chicken stock and stir to combine. Bring the mixture to a boil, then reduce the heat to a simmer.

6. Simmer for 10 minutes to allow the flavors to meld.

7. While the soup is simmering, prepare your dumplings by mixing together the flour, salt, and baking powder in a medium bowl. Make a well in the center and pour in the milk and melted butter. Mix until just combined; be careful not to over-stir.

8. Drop rounded tablespoons of dumpling dough into the simmering soup. Distribute them evenly around the pot.

9. Cover the pot with a lid and let simmer for about 12 to 15 minutes until the dumplings are cooked through.

10. Remove the pot from heat. If desired, season with additional salt, pepper, and sprinkle with fresh parsley.
