Instructions
Step 1
Heat a pan with a drizzle of olive oil and add sausage, browning both sides and breaking up into smaller pieces. Remove from pan when cooked.
Step 2
Add a bit more olive oil, and add garlic, onion and chili. Sweat until soft over medium heat, about 4-5 minutes.
Step 3
Add tomato paste and cook another two minutes. Add vodka and increase heat to high, and decrease by about 20% volume.
Step 4
Add cream, and if you want, blend the sauce for a smoother consistency. Then add the sausage back in, and simmer for about 15 minutes.
Step 5
Boil the pasta in salted water, then transfer to the sauce with some pasta water. Continue cooking until al dente, adding more cream and pasta water if necessary.
Step 6
Serve and garnish with cheese and parsley. Enjoy!
