Step 1
In a saucepan brown 1 lb. of unsalted butter. Strain the butter and allow it to cool to room temperature. Put the butter in in the bowl of a stand mixer. Add 2 lbs. of confectioner's sugar, vanilla and 1tbsp of heavy cream. Mix slowly at first speeding up as the sugar incorporates into the butter. Mix until the butter is fluffy and almost white. If needed you may add more cream one tsp at a time while mixing to get the consistency you want.
