1 tablespooncornstarch
1 tablespoonsoy sauce
tamari for gluten-free
1 tablespoonhoney
1 teaspoonrice vinegar
½ teaspoonminced ginger
¼ teaspoongarlic powder

Instructions
Step 1
Wash and chop the bell pepper and carrots.
Step 2
Combine cornstarch, soy sauce, honey, rice vinegar, ginger, garlic powder, salt, and pepper in a bowl to make the pork marinade.
Step 3
Add the pork cubes to the marinade and toss to coat.
Step 4
In a separate bowl, whisk together pineapple juice, ketchup, soy sauce, honey, cornstarch, and water to make the sweet and sour sauce.
Step 5
Add the bell pepper, carrots, and pineapple chunks to the Instant Pot.
Step 6
Pour the sweet and sour sauce over the vegetables.
Step 7
Place the marinated pork cubes on top of the vegetables and sauce.
Step 8
Close the lid and set the valve to "sealing."
Step 9
Cook on Manual High Pressure for 5 minutes.
Step 10
Allow the pressure to release naturally for 5 minutes, then release any remaining pressure manually.
Step 11
Carefully stir the pork and vegetables to coat everything in the sauce.
Step 12
Serve immediately over rice or noodles.
