Instructions
Step 1
Combine Char Sui Sauce, honey, Chinese cooking wine, oyster sauce, sugar, garlic and spring onion in a large bowl. Add the pork and turn to coat. Cover and place in the fridge overnight to develop the flavours.
Step 2
Preheat oven to 250 C. Line a roasting pan with foil. Place a wire rack over the foil. Drain pork, reserving the marinade. Arrange pork on the wire rack. Roast for 5 minutes. Brush with a little of the reserved marinade. Reduce oven to 200 C and roast for 25 minutes, brushing with reserved marinade every 5 minutes. Brush with half the extra honey and roast for 5 minutes.
Step 3
Turn the pork and roast for 25 minutes, brushing with reserved marinade every 5 minutes. Brush with the remaining honey and roast for 5 minutes or until the pork is caramelised and cooked through.
Step 4
Serve pork with rice and Asian greens. Drizzle with pan juices.
