Instructions

Step 1
1. Mince garlic; dice onion; sauté with 1sp oil in a large sauté pan. Remove and keep in small bowl aside.

2. Cut eggplant into thin (¼ inch) rounds. Thinner the slices means less bake time.
Step 3
3. Place breadcrumbs in shallow dish. Whisk egg in separate bowl, add 2 tbsps of water in a small bowl with egg.

4. Heat skillet with liberal oil on medium. Dip eggplant rounds in egg wash, then breadcrumbs, then heat in skillet until golden brown.
Step 5
5. Place a small layer of marinara on your 9x13 baking pan. Layer - eggplant rounds, mozzarella cheese, fried onions, marinara sauce, parmesan. If you want, add small spoon fulls of ricotta every other layer. Sprinkle with oregano, basil, salt and pepper. Be liberal with cheese and sauce.

6. Repeat frying eggplant and adding the next layers until all eggplant is used.
Step 7
7. Bake at 365 degrees F for 30-40 minutes until eggplant is soft and cheese is bubbly.
