How to: Coconut Milk

Coconut milk is one of those ancient plant based creams/milk.
I learned how to make creamy coconut milk from my lovely team back in Juna’s Eatery.
You want creamy coconut milk? Here are the secrets:
1. Shred the coconut meat,
2. Use warm to hot water to soak the shredded coconut
3. Use enough water to cover the coconut shreds, this will ensure a thick creamy coconut milk, you can always dilute it with more water later.

Instructions
Step 1
Crack open your coconut & save the water to enjoy in smoothies or on its own.
Step 2
Scrape out the coconut flesh using a coconut scraper or a knife to pop out the flesh.
Step 3
Grate the flesh of the coconut. To get it all shredded up.
Step 4
Cover the shredded coconut with warm water and let it sit for a minimum of 15minutes. The ratio here is roughly 1:1.
Just make sure the shredded coconut is fully submerged in the water.
Step 5
In a blender, pour the coconut/water mixture and blend until smooth.
Step 6
If you want to dilute it into a more liquidy consistency use more water or you can use coconut water. TIP: using the coconut water means you are using the coconut milk on the day you are making this, as it won’t sit well in the fridge for longer than a day.
Step 7
Set a unbleached hemp or cotton muslin bag or piece in a strainer. And place the strainer on top of a liquid container. Pour the coconut milk mixture in and strain the liquid out.
Step 8
Ring out all the liquid and you are left with just coconut flesh pulp. To make coconut flour: spread the pulp in a thin layer and dry out in the oven or dehydrator on 50 degrees. For as long as it needs to dry out.
Step 9
When to sweeten? I like to sweeten when I need sweetened milk.
So I usually just bottle the milk unsweetened.
