Ingredients

6jalapeño peppers
diced deseeded
1 lbbacon
chopped
2 x 8 ozcream cheese
blocks, room temperature
0.5white onion
diced
1 lbfrozen tater tots
½ cupsour cream
1 cupchicken broth
1 lbshredded cheddar cheese
2 tablespoonspaprika
salt
½ tablespoongarlic powder
½ tablespoononion powder
Panko bread crumbs
chives
Fresh cut
pepper
Instructions
Step 1
Preheat oven to 400°. Cook bacon until crispy, reserve bacon fat. Put bacon into large mixing bowl.
Step 2
Dice jalapeños and white onion and set aside
Step 3
Cook garlic and onions in bacon grease until translucent. Drain any oil and add to mixing bowl.
Step 4
Mix jalapeños, cream cheese, bacon, onion/garlic, sour cream, 1/2 of the cheddar cheese and spices in a large bowl. Stir in chicken stock slowly.
Step 5
Line 9x13 greased pan with tatertots along the bottom. Carefully add mixture to the top of the tator tots.
Step 6
Cover with bread crumbs fully. Cover with remaining cheddar cheese and bacon bits. Cover loosely with aluminum foil and cook for 25 minutes.
Step 7
Remove aluminum foil and cook another 10 minutes at 425° until top is crispy. Remove from oven and top with chives and serve.
