Step 1
Cook Rice: Cook the brown rice according to package instructions. Set aside.
Brown the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef, season with salt, pepper, and garlic powder. Cook until browned. Remove beef from skillet and set aside.
Sauté Vegetables: In the same skillet, add the remaining olive oil. Sauté the onions, bell peppers, and broccoli until tender.
Combine: Add the cooked beef back to the skillet with the vegetables. Stir in the cooked rice and soy sauce. Mix well.
Cook Together: Cook everything together for a few more minutes, adjusting soy sauce, salt, and pepper as needed.
Serve/Store: Serve immediately or divide into meal prep containers.
