Kim's Peanut Butter Oatmeal Cookies

Instructions

Step 1
Preheat oven 375 F
Step 2
In a bowl cream together the softened butter and sugar using a mixer on a medium setting until smooth and evenly yellow.
Step 3
Add the egg and vanilla and mix again until thoroughly incorporated. And then mix in the peanut butter.
Step 4
Add in the salt, baking soda, and flour in increments while mixing until no more remains.
Step 5
Finally stiri n the Oats and PB chips by hand with a large spoon or spatula.
Step 6
Allow dough to chill for about 15-20 min before baking.
Step 7
Drop 2 Tbsp size scoops onto a greased cookie sheet about 2 inches apart.
Step 8
Bake @ 375 F for 13-15 minutes (*14 for us) until golden and puffy. Remove to a cooling wrack. Makes about 2 dozen.
