Ingredients

1 cupbutter
at room temperature
1 ¼ cupssugar
¾ cupbrown sugar
1 ozbaking chocolate
melted
3eggs
large, at room temperature
2 ½ cupsflour
½ cupcocoa powder
1.25 tspsbaking powder
1 tspsalt
1 tspvanilla extract
1 tspmint extract
or 2 tsps mint and skip the vanilla if you like your cookies mintier
1 cupmini white chocolate chips
plus a few extra to top
1candy canes
crushed, optional
Instructions
Step 1
Beat the butter, sugar, brown sugar and melted baking chocolate together until smooth. Add the eggs one at a time.
Step 2
Then sift the flour, cocoa powder, baking powder and salt together and add to the wet ingredients. Add the extract of your choice and fold in the white chocolate chips and crushed candy cane.
Step 3
Scoop batter using a small cookie scoop (1 - 1 1/2") onto parchment lined baking sheets 2" apart. Stick a couple of chocolate chips on top.
Step 4
And bake at 350F for 12-15 minutes.
