Brie Cheese and Leek Tartlets

Instructions

Step 1
Melt olive oil and butter in a pan then add half of a thinly sliced leek and sauté 2-3 minutes . Sprinkle sugar on top then add a splash of white wine vinegar and cook until it starts to caramelized then take it off the heat

Step 2
Spray a mini muffin tray with baking spray ( use a cupcake tray and make bigger tarts if you don’t have a mini tray ) now roll out the pastry and cut into 24 squares or however many your tray allows for . Push the dough into each hole then cut the Brie into squares and push into the centre of each tart .

Step 3
Spoon the leeks on top of the tarts then add pepper and thyme . I don’t recommend salt for this recipe as it’s full of flavor but if you like salt you can add a pinch. Bake at 200 c 392 f for 15-20 minutes and enjoy
