Instructions
Step 1
Heat 1 Tbsp oil from sundried tomatos in skillet.
Step 2
Add gnocchi. Cook until plump and brown.
Step 3
Add beans and spinach. Cook until spinach is wilted. Transfer to a bowl.
Step 4
Add tomatos and shallots to the pan and cook 1 minute.
Step 5
Add broth and cook until liquid has mostly evaporated. Reduce heat and add remaining ingredients
Step 6
Return gnocchi to the pan and stir to coat. Serve hot.
