Ingredients
10 servings
For the Filling:
1 cupcreamy natural peanut butter
no added sugar
½ cupunsweetened cocoa powder
4 tablespoonshoney
or maple syrup, or coconut sugar for a refined sugar-free option
½ teaspoonvanilla extract
salt
optional
For the Coating:
Instructions
Step 1
Mix it up: In a large bowl, combine the peanut butter, cocoa powder, honey or maple syrup, vanilla extract, and salt (if using). Mix well until a smooth and thick dough forms.
Step 2
Truffle time: Using your hands, roll the dough into 1-inch balls. Place them on a parchment-lined baking sheet or plate.
Step 3
Chill out: Pop the truffles in the freezer for at least 15 minutes, or until firm.
Step 4
Chocolate dip: Melt the dairy-free chocolate chips in a double boiler or microwave (in 30-second bursts, stirring in between, until melted). If the chocolate is too thick for dipping, stir in a little coconut oil to thin it out.
Step 5
Get coated: Using a fork or small spoon, carefully dip each truffle into the melted chocolate, coating it completely. Gently tap the fork against the bowl to remove any excess chocolate.
Step 6
Set and enjoy: Place the coated truffles back on the prepared baking sheet or plate and let them cool completely for about 10 minutes, until the chocolate hardens.
Step 7
Truffle delight! Once set, enjoy your delicious no-bake chocolate peanut butter truffles!
Step 8
Tips:
Step 9
For extra peanut butter flavor, add a sprinkle of chopped peanuts to the coating.
Step 10
If you don't have honey or maple syrup, you can also use agave nectar or brown rice syrup.
Step 11
Get creative with the coatings! Try rolling the truffles in chopped nuts, coconut flakes, or sprinkles before the chocolate hardens.
Step 12
Store these truffles in an airtight container in the refrigerator for up to 5 days.
