Step 1
Add egg whites to a large bowl and start beating with an electric whisk until stiff and fluffy

Slowly sift in the powdered sugar beating well after adding each bit

Blend the coconut in a coffee grinder to make it slightly finer then add in batches to the egg whites and fold until it’s all combined

Step 4
Add heaped tablespoons of the batter to a lined baking sheet then use a small spoon to make a hole in the middle . Add a little dollop of jam in the centre of each one . Bake at 180 c / 360 f fan setting for 10-12 minutes or until golden then cool on a wire rack .
