Instructions
Preparing Ladyfinger layers
Step 1
Prepare the coffee and wait, until it comes to a room temp.
Step 2
Lightly wet the ladyfingers with coffee.
Step 3
Place them on a sheet and cut them into desired shape using a mould.
Step 4
Lightly bursh the sides of ladyfingers with coffee.
Step 5
Follow from step 2 to make second layer of ladyfingers cut into desired shape.
Preparing the cream
Step 6
Prepare one medium and one small bowl. Add cold water and some ice to the bigger bowl and place smaller in it.
Step 7
In the inner bowl whip the egg yolks with the sugar
Step 8
Taste the cream to see if the sugar has dissolved well and to check for its creaminess.
Step 9
Add the mascarpone cheese.
Step 10
Whip the cream to incorporate mascarpone. The goal is to dissolve forming lumps without removing density from the cream.
Step 11
Try to achieve this consistency.
Step 12
Prepare pastry bag with desired tip and fill it with cream.
Assembly
Step 13
Pipe the first layer of cream on the ladyfingers.
Step 14
Sprinkle a thin, even layer of cocoa powder over the layer of cream.
Step 15
Carefully place the second layer of ladyfingers over the layer of cream.
Step 16
Even out the last layer of cream using a confectionery spatula.
Step 17
Sprinkle last thin and even layer of cocoa powder over the second layer of cream.
Step 18
Gendly lift up the mould.
