Step 1
Make 2 cup of strong coffee or espresso and let it cool down
Step 2
Separate egg yolks from white
Step 3
In a large bowl add sugar to the egg yolks and whisk
Step 4
Get a saucepan with water on boil and let that simmer
Step 5
Put the bowl on the saucepan and whisk the egg mixture for around 10 mins, sugar should dissolve and turn into a nice custard

Set that aside and let it cool down slightly

In a separate bowl add the whipping cream and whisk until medium peaks
Step 8
In a large bowl add the mascarpone and vanilla essence, whisk until creamy
Step 9
Then add the egg mixture to the mascarpone and whisk until combined into a smooth creamy mixture

Dip the lady fingers into the coffee mixture, quickly roll each side twice and then place onto the baking dish (14" x 10"), repeat until bottom of baking dish is covered

Next fold the whipped cream into the egg mixture until well combined

Then add half of the cream on top of the lady fingers, then repeat for a second layer, dip lady fingers into the coffee and create a new layer. Place lady fingers opposite to bottom layer, so if you place the lady fingers horizontally on bottom layer, top layer should be vertically placed

Then add the remaining egg mixture on top of the lady fingers

Refrigerate overnight or at least a few hours until it sets

Before serving, dust some cocoa powder on top and refrigerate again before serving

Slice into 15/16 even pieces and enjoy
