Step 1
Preheat the oven to 450 degrees. Mix together all of the spices. Rub the prime rib all over with vegetable oil using a paper towel. Using your fingers, rub the seasoning mix into the meat. This is enough for up to a 6-8 pound prime rib roast.
Step 2
Bake at 450 degrees for 5 minutes then drop the temperature to 325 degrees ( don’t remove the meat from the oven while the temperature is dropping). Cook a 4-6 pound roast for 26 to 32 minutes per pound (depending on whether you want it rare, medium, or well done). Cook a 6 to 8 pound roast for 23 to 25 minutes per pound. Check a half an hour before finish time (use a thermometer). Let the roast sit for half an hour before carving.
