Red Wine Poached Pear with Cherries (Vegetarian)

This seemingly indulgent dessert is popular in the French wine region of Beaujolais and qualifies as a High Satiety meal due to both its very low energy density and its high fibre content. Traditionally conference pears are used in this dessert however you can use other types of pear providing they are not too ripe as they may become mushy during poaching. Similarly, a fruity Beaujolais wine can be substituted with other grape varieties such as Merlot or Cabernet Sauvignon, as used in this recipe. If you do use Beaujolais you may need to reduce the amount of added sugar otherwise the sauce may be overly sweet. When served with a blob of crème fraiche, yoghurt or ice cream, this dessert is still low in energy density.

In a saucepan that will fit four pears on their sides, add the wine, water, sugar, vanilla, cinnamon, cloves and some orange zest. Heat this liquid until it begins to simmer then add the peeled pears. Every 5 minutes reposition the pears so the sauce is equally absorbed. After 15 minutes add the cherries and continue for poach for a further 10 to 15 minutes. Remove the pears and cherries from the saucepan and cool in a bowl. Pour the sauce through a sieve to remove any bits, then reduce this sauce over a high heat until it starts to become syrupy but not too thick. Place one pear and several cherries in each of four bowls, pouring over a little of the sauce. Suggested servings: Four.
