Instructions
Step 1
Preheat the oven to 180 fan
Step 2
Tip the bulgur, dates and stock into a medium roasting tin.
Step 3
Mix the olive oil, salt, carrots, courgettes and za’atar and scatter in one layer over the bulgur.
Step 4
Bake for 30 minutes
Step 5
Mix the pistachios, olive oil, lemon zest, lemon juice and honey together and set aside
Step 6
Once the vegetables are cooked, scatter this mix plus the fresh mint over the vegetables and serve hot or at room temperature
Step 7
Serves 2 as a main or 4 as a side
