2chicken breasts

1onion
diced

6carrots
peeled and chopped

5 clow sodium chicken broth

1 cwhite wine

2 Tbspthyme leaves

2bay leaves

1 tsppaprika

½ tspred pepper flakes

1parmesan rind

kosher salt

pepper

16 ozmini potato gnocchi

½ cgrated parmesan cheese

¾ cwhole milk

2 Tbspolive oil

2 lbsmixed mushrooms
roughly torn

4garlic cloves
smashed

4 Tbspbutter

1lemon zested
Instructions
Step 1
Heat olive oil in a large pot over high heat. Add the mushrooms and season with sault and pepper. cook, undisturbed until golden. Stir and continue cooking until the mushrooms have caramelized
Step 2
Reduce heat to medium and add garlic, butter and 1tbsp of thyme and lemon zest. Cook until the garlic is caramelized. Remove the garlic from the post, mash with a fork and add it back to the pot along with the chicken, onion, carrots, broth, wine, remaining thyme, bay leaves, paprika, red pepper flakes and Parmesan ring. Season with salt and pepper. Bring to a boil then reduce to a simmer until the chicken is cooked through.
Step 3
Remove chicken and shred.
Step 4
Return soup to a boil and add gnocchi, grated Parmesan and milk. Stir the chicken back into the soup.
