Instructions
Step 1
Preheat the oven to 450°F w/ Dutch oven/lid.
Step 2
Make dough: sift flour, salt, and baking soda to a large mixing bowl. Slowly pour in the buttermilk while stirring with your fingers, until you have a sticky dough.
Step 3
Shape bread: Turn dough out on floured surface and shape into a disc/mound. Drop oven to 425 and back covered in Dutch oven for 30 mins. After, remove lid and continue baking for 15-25 mins.
Step 4
Finish and bake: Dust the top of the bread with flour. Make two deep incisions crosswise through the entire bread (it should look like a four-leaf clover, do cut almost through the bread!). Bake for 30-40 minutes, or until golden in color and hollow when tapped on the bottom. Cool on a rack before serving warm.
