Instructions
Step 1
Sift flour salt and baking soda or bread soda In a very large bowl then whisk to combine

Step 2
Make a hole in the centre then add the buttermilk. Use a loose claw hand to gently mix the flour and buttermilk. Just bring it together you don’t want to over-mix. Turn out into a light floured surface then shape into a circle and pat it flat

Step 3
Sprinkle some flour on a lined baking sheet and place the dough on top then use a sharp knife to cut a cross in the centre of the bread . Prick each corner with a knife to let the fairies out ( as in Irish tradition) then bake in a 230 c pre heated oven for 20 minutes then reduce the temperature to 200 c and bake another 20 - 25 minutes flipping over for the last ten minutes . The bread is bakes when you knock on the bottom and hear a hollow sound
Step 4
Let the bread cook on a wire rack then serve or i usually cut in half and freeze half because it’s a huge loaf and freezes really well.
