Step 1
Add onions and celery in a large pan and cook for 5 minutes. Add the garlic and cook another 5
Step 2
Add the tomatoes, potatoes, bay leaves and stock. Bring to the boil and reduce to low for 15 minutes
Step 3
Add the fish and bring back to the boil reducing to medium low for 15 minutes or until potatoes are cooked and fish flakey
Step 4
Stir in lemon juice and herbs, drizzle with extra virgin. Taste for seasoning and serve
