Ingredients

Smoked beef neck
1green pepper
1yellow onion
1 bunchgreen onion
salt
pepper
collard greens
Tobasco peppers
lil yellow ones
lemon juice
sugar
Little bit
butter
Instructions
Step 1
Dice onion, green pepper and green onion. Saute in pot with butter until browning. Add water, salt, pepper and pork.
Step 2
Oil for at least 2 hours until a good broth is made.
Step 3
De-rib collards, cut into short ribbons. Rinse VERY well.
Step 4
Add to stock, add sugar boil until collards are desired consistency. Cook low and slow with a lid on.
Step 5
Add pepper sauce until well seasoned. Add lemon, salt and pepper to taste.
