Ingredients

2 x 6 ozpork loin chops
bone in center cut
⅛ tspsalt
⅛ tsppepper
2 tspolive oil
½ cupless sodium chicken broth
¼ cupwhite wine
0.5 Tbspcornstarch
2 Tbspsour cream
1 Tbspwhole grain mustard
½ tspdried thyme
0.5 lbbaby carrots
1 Tbspgarlic
minced
2 tspolive oil
1 tsplemon juice
⅛ tspsalt
⅛ tsppepper
3 cupsbaby arugula
2 Tbspsmoke roasted almonds
lightly salted, chopped
Instructions
Step 1
1. Sprinkleporkwithsaltandpepper.Cookinhotoilinanonstickskilletovermedium- high heat 3 to 4 minutes per side or until browned and done. Remove from skillet, and keep warm.
Step 2
2. Whisktogetherbroth,wine,andcornstarch;addtoskillet,andcook,whisking often, until thickened. Stir in sour cream, mustard, and thyme until blended. Serve sauce over pork. Sprinkle with additional thyme, if desired.

1. Preheatovento425°F.Halvelargercarrotslengthwise.Tosscarrots,garlic,oil, lemon juice, salt, and pepper on a greased rimmed baking sheet; spread in a single layer.
Step 4
2. Bake20to25minutesoruntiltender.Tosswitharugula;sprinklewithnuts.
