Easy Healthy Chicken Broccoli Soup(After 3rd week on program)

Ingredients
8 servings

1onion
large, finely chopped

2celery ribs
finely chopped

4garlic cloves
crushed

1bay leaf

1 Tbspdried mixed herbs

1 tspchilli flakes
optional

5 cupsbroccoli
stems removed and finely chopped

6 cupsfat free chicken broth
Home-made or good quality store bought, check out our recipe for chicken broth

2 cupsunsweetened almond milk

2 cupschicken
shredded, i used rotisserie chicken

salt
to taste

pepper
to taste

lemon juice
to taste

1 Cupcauliflower rice
or palmini or miracle rice

2 cupsfat free shredded cheddar cheese
Instructions
Step 1
Sauté the onion, celery, and broccoli stalks, and cauliflower rice until soft and fragrant and just starting to brown (this takes around 10 minutes).
Step 2
Add the garlic, bay leaf and herbs and sauté for another minute before adding the chicken stock, and milk mixture.
Step 3
Bring to a simmer then add the broccoli florets and shredded chicken.
Step 4
Allow to cook for 15 minutes then season with salt, pepper and lemon (optional).
Step 5
After 3rd week on program, or leave out the cheese.
