Ingredients
4 servings
2 tablespoonsolive oil
1onion
medium, diced
2cloves garlic
minced
2carrots
medium, diced
2celery stalks
diced
1 teaspoondried thyme
1 teaspoondried oregano
1 teaspoonsalt
or to taste
½ teaspoonblack pepper
6 cupschicken broth
preferably low-sodium
2 cupschicken
cooked, shredded, rotisserie chicken works great
1 cupzucchini
diced
1 cupcauliflower
cut into small florets
1 cupspinach
or kale, chopped
1 tablespoonlemon juice
optional
fresh parsley
chopped, for garnish
Instructions
Prepare the Ingredients:
Step 1
Dice the onion, carrots, and celery.
Step 2
Mince the garlic.
Step 3
Dice the zucchini.
Step 4
Cut the cauliflower into small florets.
Step 5
Shred the cooked chicken.
Cook the Vegetables:
Step 6
In a large pot, heat the olive oil over medium heat.
Step 7
Add the diced onion, carrots, and celery. Cook for about 5 minutes, stirring occasionally, until the vegetables start to soften.

Add the minced garlic and cook for another minute until fragrant.
Season and Simmer:

Add the dried thyme, dried oregano, salt, and black pepper to the pot. Stir to combine.

Pour in the chicken broth and bring the mixture to a boil.
Add the Chicken and Remaining Vegetables:

Once the broth is boiling, reduce the heat to low and add the shredded chicken, diced zucchini, and cauliflower florets.

Let the soup simmer for about 20 minutes, or until the vegetables are tender.
Add Greens and Finish:

Stir in the chopped spinach or kale and let it cook for an additional 5 minutes.

If desired, add a tablespoon of lemon juice for a fresh, bright flavor.
