Butter mix

175gbutter
melted

250ggranulated sugar

8gvanilla sugar
or a dash of vanilla extract

4eggs
room temperature

milk
max 1 dL, room temperature

Instructions
Step 1
Preheat oven to 180°C
Step 2
Lightly melt butter in double broiler on low, add sugar(s) and mix well - until texture is smooth and sugar is barely noticeable



Step 3
Into the butter mix add four medium sized eggs and a dash of milk, the butter should not be so hot as to cook the eggs when combined


Step 4
In a separate bowl, add your dry ingredients then add to the butter mixture, mixing gently and ideally folding the mixture over itself using a spatula - too much mixing will develop the gluten in the flour and create a tougher dough





Step 5
Line pan with parchment paper - use butter on pan to keep the paper stuck in place - leave a little paper extra to pull out the brownies easily after baking

Step 6

Pour mixture into your baking pan roughly 30x10 cm, level it using your spatula and sprinkle a fistful of chopped chocolate on top of the mixture
Step 7
Bake at 180°C for 20 - 25 min depending on the size of your baking pan and desired texture
