Instructions

Step 1
Preheat the oven to 350 degrees. Smear the bottom of 9×9 pan with a little bit of butter.

Peaches

Step 2
Dump the frozen peaches (800g) in a baking dish and pop them in the oven while you mix up your topping. Once you’re done mixing the topping, the peaches should be thawed out.

Drain them off and put the peaches t in the prepared baking dish and add sugar (50g), and mix directly in the dish.

Cobbler

Step 4
Mix the butter (12T), sugar (225g), vanilla (1.5t), flour (180g), baking powder (1.5t), and salt until a cookie-dough-like batter forms.

Step 5
Place scoops of the mixture over the top of the peaches. Spread with a spoon or with your fingers – no need for perfection here.

Baking

Step 6
Bake for 30 minutes. At this point it should be juicy and bubbly around the sides.
Step 7
If it’s not saucy and bubbling after 25 minutes of baking, pour two tablespoons of melted butter over the peaches.
Step 8
Sprinkle the top with turbinado sugar (20g). Bake another 10 minutes and then finish with a few minutes under the broiler (475-ish) for a few minutes to get it golden brown and slightly crunchy on top.
Step 9
To get a thick saucy peach base, let it stand for 20-30 minutes before serving.
