Step 1
Chop carrot, celery, and onion finely and cut the potatoes into chunks. Heat olive oil in a pan on high heat, add the chopped vegetables and sauté for a few minutes until fragrant.
Step 2
Add the lentils and deglaze with white wine, letting the alcohol evaporate completely. Add water to cover, then add potatoes, tomato paste, bay leaves, salt, and pepper. Lower the heat and cook until lentils and potatoes are soft.
Step 3
Cook the cotechino in boiling water according to the type. Pre-cooked cotechino takes about 15 minutes, fresh cotechino may take up to 60 minutes or more. Slice and serve hot with the lentils.
