Step 1
Bash lemongrass with mallet. Slice diagonally into 5mm thick pieces
Step 2
Mix the marinade ingredients in large ziplock bag. Add the chicken seal the bag pressing out all of the air.
Step 3
Preheat oven 180 fan forced. Line baking tray with foil then baking paper.
Step 4
Bake for 30 minutes remove from oven baste the chicken brushing the tray juices onto chicken. Bake for another 10 minutes baste again and bake for a further 15 minutes remove from oven
Step 5
Rest chicken for 5 minutes then serve with rice
