Step 1
Fill up 2 pots 3 quarters up with water to boil. One huge pot to blanch. The Other 12 L of water to a 15 L stock pot for the broth.
Step 2
Char one onion and ginger root for 10 min on 400F.
Step 3
Rinse beef parts with salt (bones, flank and ribs) and add into the pot used for blanching.
Step 4
Rinse blanched beef parts for 15 minutes and rinse. Put the beef parts in the boiling stockpot along with skinned charred onion, ginger root, 2 spice pouches. Simmer on med-low heat for 2 hours.
Step 5
After two hours, dispose the onion, ginger and spice pouches. Take out the beef flank and ribs to set aside for later.
Step 6
You got 4 more hours to go! Do whatever you need but save time by doing some prep work: Soak 2 packages of noodles in cold water for 2 hours before the broth is ready. Chop 1 bunch of green onions, spice one whole onion, slice your beef and wash your herbs to set aside for garnishing.
Step 7
After your 6 hours is up, add beef balls and seasoning (pho seasoning, chicken broth mix, rock sugar, salt and pepper to taste)
Step 8
Last step! Assemble your bowl: blanch noodles, add broth, meat and garnish with your preferred toppings.
