Instant Pot Beef and Broccoli

Ingredients
4 servings
1.5 lbsboneless beef chuck roast
well trimmed and sliced into thin strips, any lean cut of meat may be used, London broil, top sirloin, etc
pepper
fresh ground, to taste
2 teaspoonsolive oil
1onion
medium, finely chopped
3cloves garlic
minced
¾ cupbeef broth
½ cupsoy sauce
⅓ cupbrown sugar
⅛ teaspoonred pepper flakes
1 lbbroccoli florets
3 tablespoonswater
3 tablespoonscornstarch
Toasted sesame seeds
for garnish, optional
Instructions
Step 1
Season beef with pepper.
Step 2
Put olive oil in the cooking pot and select Sauté. Add chopped onion to oil and sauté for 2 minutes until onion starts to soften. Add garlic and saute for 1 additional minute.
Step 3
Add beef broth, soy sauce, brown sugar, and red pepper flakes to the pot. Stir until brown sugar is dissolved.
Step 4
Add beef. Set IP on High Pressure and set timer for 12 minutes.
Step 5
Steam broccoli on stove top approximately 12 minutes or until tender.
Step 6
When IP beep sounds, turn pressure cooker off and use Quick Release to relieve pressure. Carefully remove the lid.
Step 7
In a cup combine cornstarch and water; stir until smooth. Add to pressure cooker pot. Stir well to combine. Select Sauté and stir until sauce comes to a boil and thickens. Add steamed broccoli.
Step 8
Serve over hot, cooked rice and garnish with sesame seeds.
