Instructions
Step 1
Add yeast and sugar to 104* F water. Let sit for 10 minutes to activate yeast.
Step 2
Using a stand mixer and bread hook, add yeast water to flour and salt. Knead dough for 10 minutes on low speed. After 10 minutes, form dough into a ball and put into an oiled bowl with lid. Let rise for 1 hour.
Step 3
Punch down dough and form into sheets. Roll into loaves and pinch together ends and flap. Let rise for another 1 hour.
Step 4
Score bread on top with knife. Add a pan of water into the oven for humidity. Cook at 400* F for 25 minutes.
