Strawberry Winter Rolls
Warming up for valentine’s 🍓💋

Recipe:
Dough:
550 g all purpose flour
200 ml luke warm whole milk
2 eggs (around 100 g of egg in total without shell)
100 g butter (room temp)
30 g fresh yeast or 8 g instant yeast
50 g sugar
A pinch of salt
Instructions:
1. Add the yeast in luke warm milk and stir till it dissolves.
2. Add the eggs, sugar and salt and stir again. Add the flour
3. With the dough hook attached to your kitchen machine, kneat the dough on medium speed for 3-4 minutes and add the butter. Increase the speed and mix for 8-10 minutes on high until you reach a “slippery dough”.
4. Let the dough rise in a warm place for 1 hour.
5. After the dough have rised, it’s time to make the cinnamon buns. Dust some flour on the surface of your table and roll it into a 30x40’ish cm. rectangle. Spread out the filling and roll it up!
6. Cut the roll into 12 equal buns using thread. Line the buns in a baking tray.
7. Cover the tray with plastic foil or a dishtowel and let them rise again for 35 minutes.
8. Bake at 200 °C (fan) for around 20-25 minutes, first 15 minutes covered with alluminium foi to prevent top from browing.
9. Let them cool down.
Strawberry filling:
500 g frozen strawberries
3 tsp lemon juice
50 g sugar
1 tsp of cornstarch
Instructions:
1. Combine frozen strawberries, lemon juice and sugar in a saucepan and let the strawberries melt on medium to high heat. Remember to stirr once in a while so your strawberries doesn’t stick to the bottom.
2. When the mixture starts to simmer after around 10 min. Add in your cornstarch and mix well - Use a stickblender to blend the filling and let it simmer for 15 minutes on medium to low heat. Cool down.
Mascarpone cream:
250 g mascarpone
100 g whipped cream
40 g powdered sugar
1 tbsp vanilla
Instructions:
1. In a bowl, whisk together mascarpone, sugar and vanilla.
2. Add the whipping cream and whisk on high speed for 15-3 seconds.
