1 cupcauliflower
grated, fresh or frozen

0.5red bell pepper
chopped

0.25onion
small, chopped

2cloves garlic

¼ cupchicken sausage
cooked, crumbled, or vegetarian crumbles for plant-based option

0.25avocado
diced

¼ cuptomato
chopped

0.25lime juice

¼ teaspooncilantro

Instructions
Step 1
Hash it out: Heat a tablespoon of olive oil in a skillet over medium heat. Add the grated cauliflower and cook for 5-7 minutes, stirring occasionally, until softened and slightly browned.
Step 2
Veggie fiesta: Add the bell pepper, onion, and garlic to the pan and cook for another 5 minutes, until softened.
Step 3
Sausage boost: Stir in the cooked chicken sausage (or vegetarian crumbles) and cook for 1 minute until heated through. Season with salt and pepper to taste.
Step 4
Eggcellent finish: Make a well in the center of the hash and crack in two eggs. Cook for 2-3 minutes, or until the whites are set and yolks are cooked to your liking.
Step 5
Avocado salsa love: In a small bowl, combine diced avocado, chopped tomato, lime juice, and cilantro (optional). Season with salt and pepper to taste.
