For the dough:
300mlwater
lukewarm
1 tspsugar
1 Tbspfast-acting yeast
500gbread flour
or plain flour
1 tspsalt
1 Tbspolive oil
For the filling:

Step 1
Combine lukewarm water, sugar, and instant yeast in a bowl; mix well and let it sit for 10 minutes to activate the yeast. In a large bowl, sift the flour, add salt, and stir to combine. Pour the yeast mixture into the bowl with flour and salt. Stir until it begins to come together, then transfer to a flat working surface. Continue kneading the dough by hand for a few minutes until it forms a soft dough. Avoid adding extra flour; maintain a soft consistency.
Step 2
Place the dough back in the bowl, coat it with 1 tablespoon of olive oil, and cover the bowl with cling film or a clean kitchen towel. Let it rise in a warm place for 1 hour.
Step 3
While the dough rises, prepare the filling: peel and boil potatoes in salted water, then drain and pass through a sieve. Add chopped herbs, mozzarella, salt, and pepper; mix well and shape into 6 equal balls. Set aside.
Step 4
Once the dough has risen, grease your hands with olive oil and transfer the dough onto a working surface. Knead it for a few minutes and shape it into a ball. Divide into 6 equal parts and roll each into a ball.
Step 5
Taking one pastry ball at a time, flatten it with your hands, place a potato ball in the center, and seal the edges. Turn it upside down, roll into a slim circle(be cautious not to over-roll to keep the filling secure). Repeat with the remaining dough and potatoes, covering flatbreads with a towel while working.
Step 6
Cook the dough on a dry pan until golden (a few minutes each side). If the flatbread starts to rise, pierce it with a knife. Grease the finished flatbreads with butter and enjoy!
