Instructions
Step 1
Boil unpeeled potatoes with a pinch of salt, peel them and leave them cool
Step 2
While potatoes are cooling, prepare the starter: mixt yeast with 50ml of warm water and 1tbsp of sugar. Starter is ready when foamy
Step 3
Mix flour with salt, add starter, mashed potatoes (cooled), oil and start kneading while adding warm water. You might need more or less water (depending on flour), add just until the dough does not stick to the bowl.
Step 4
Leave the dough to rest for 30 minutes
Step 5
Fold and stretch a few times
Step 6
Leave the dough rise untill it has doubled in size.
Step 7
Split the dough in 2, form the 2 breads and let them sit on parchment paper
Step 8
Preheat the oven to 230°C (Convection+Steam)

Step 9
With a sharp knife, score the breads and bake them with steam @230°C for 20 minutes

Step 10
Reduce temperarure to 215°C and bake them for another 20 minutes without or low steam.

Step 11
Let bread cool on a rack
