Boil your potatoes in some salted water about for 20-25 mins or until fork tender.

Step 3
In a bowl, mash your boiled potatoes with a potato ricer then mix them with corn starch until you form a dough.

Step 4
Take 50g of potato dough and use your hands to form a flat disk.

Add mozzarella cubes, close your little focaccia with your hands and flatten it into a “pancake” shape.

Add a generous amount of oil in a pan over medium low heat and let it warm up for a couple of mins.
