Boil your potatoes in some salted water about for 20-25 mins or until fork tender.

In a bowl, mash your boiled potatoes with a potato ricer then mix them with corn starch until you form a dough.

Take 50g of potato dough and use your hands to form a flat disk.

Add mozzarella cubes, close your little focaccia with your hands and flatten it into a “pancake” shape.
