Instructions

Step 1
Line an 8x8 baking dish with parchment paper
Step 2
Add melted butter 1/4 cup sugar and graham cracker crumbs, mix until the crumbs absorb all the butter

Press with measuring cup to pack the crust down firmly and evenly. Set aside.
Step 4
In a stand mixer, mix the 2 packages of cream cheese with remaining 1/4 cup sugar until smooth. Add in heavy cream and vanilla bean paste. Slowly add the beaten eggs. Do not over mix, this shouldn't be fluffy. Scrape the bowl sides as needed.
Step 5
Pour on to the prepared crust, smooth to the edges and pop any bubbles.
Step 6
Bake at 350° for about 25 minutes. It should look fully set around the edges, very wiggly in the center, but the top will be set.
Step 7
Let sit uncovered until cool and fully set then refrigerate for a few hours.
