Instructions
Step 1
In a medium saucepan warm olive oil over medium heat.. Add pancetta and sautรฉ until it begins to brown about 5 minutes. Add the garlic, basil, and celery cook 5 minutes longer
Step 2
Stir in tomatoes and the beans and continue cooking until the vegetables are soft, 25-30 minutes. Add red pepper flakes and stir well.
Step 3
Meanwhile, boil a large pot of water. Add 1 tbsp salt and the pasta. Cook, stirring frequently for about 5 minutes. The pasta will be very underdone. Reserve 1 cup of pasta water and drain the rest. Add the reserved water and pasta to the beans.
Step 4
Continue cooking until the pasta is al dente and the liquid has mostly been absorbed, 5-7 minutes. Serve with grated cheese.
