Step 1
1️⃣Preheat the oven to 425.
Step 2
2️⃣Add the cornstarch and the spices to a small bowl. Mix them together. Add the carrots to a large bowl, then add the olive oil to the carrots and toss. Add the spices and toss. Add the carrots to a sheet pan and spread out.
Step 3
3️⃣Place them in the oven for 35 -40 minutes, reducing the heat to 350 after 20 minutes and tossing a couple times. Take them out of the oven when they are crisp on the outside.
Step 4
4️⃣While they roast, heat the olive oil over medium heat. Add the garlic until it sizzles then remove from the heat. Add the honey and mix together. Add the mixture to a small bowl, add the sour cream, salt and paprika and mix to combine.
Step 5
5️⃣Add the carrots to a plate, top with the sauce, parsley and pistachios.
