These muffins practically taste like cupcakes but they are so moist and soft. It’s like eating a flavoured pillow!! The coffee has a subtle taste while the chocolate chips standout!!
I’ll definitely be needing to try more combinations asap!!

Instructions
Step 1
Begin by combining the flour, baking powder, cinnamon and salt together in a small bowl.
Step 2
Preaheat oven at 350°C
Step 3
Using a stand/handheld mixer cream the butter and sugar together until combined at a high speed. Add in the flax egg and vanilla extract and continue to cream.
Step 4
Slowly and carefully add in the dry ingredients until combined. Careful not to over-mix.
Step 5
Once fully combined pour in the coffee/cold brew concentrate until everything looks combined. Again careful not to mix too much!
Step 6
Add chocolate chips and mix briefly again.
Step 7
Pour into a cupcake tin and bake for around 20 minutes or longer as every oven varies. Check on them constantly and double check by sticking a tooth pick into them, until it comes out clean!!
