Marinade
1.5kgchicken thighs
bone-in and skin-on
¾ cupsoy sauce
3garlic cloves
minced
2bay leaves
1 cupwhite vinegar
1 ½ teaspoonsbrown sugar

Cooking
1 Tbspblack peppercorns
or 2 tbsp ground black pepper
3 tablespoonsvegetable oil

Serving
Instructions
Marination
Step 1
Combine chicken with the marinade ingredients. Marinate for at least 30 minutes.
Sauté
Step 2
Heat 2 tablespoons of oil in a large pot over medium-high heat.
Step 3
Add the marinated chicken, and briefly fry to brown the chicken on all sides. Remove the chicken and set it aside.
Step 4
In the same pot, add the remaining 1 tablespoon of oil. Fry the remaining garlic, sliced onions, Thai red chilies, and the rest of the black peppercorns until aromatic.
Simmer
Step 5
Return the browned chicken to the pot with sautéed aromatics.
Step 6
Pour the marinade over the aromatics. Add water as needed.
Step 7
Add the remaining bay leaves to the pot. Bring to a boil, then reduce heat to a simmer. Cover and cook for 30-40 minutes until chicken is tender. Add a tablespoon of honey or so if needed
Serve
Step 8
Serve the Chicken Adobo over steamed rice. Garnish with additional sliced green onions or cilantro if desired.
