Turkey Meatloaf Muffins Servings: 4 1 lb ground turkey 1 medium zucchini, shredded shredded 1 egg 1⁄4 cup almond flour 1 tsp onion powder 1⁄2 tsp garlic powder 1⁄2 tsp sea salt 1⁄2 Tbsp coconut oil Preheat oven to 350oF. Shred carrot and zucchini. Using hands, mix all ingredients, except coconut oil, together in a bowl until thoroughly combined. Grease muffin pan with coconut oil. Divide mixture into 8 muffin cups. Bake at 350oF for 30 minutes. Top with mashed potatoes or cauliflower and enjoy! One serving is 2 muffins.
