Cheesy Beef & Chorizo Rigatoni
What a BANGING pasta dish. The crispy chorizo pieces on the top took it to the next level.

Method
Cook the pasta, drain and set aside keeping a few tbsp of pasta water aside. While the pasta is cooking fry the chorizo for 2-3 mins to go crispy, remove then fry the onion in the chorizo oils for a few mins to soften. Add in the beef mince and all the seasoning.
Mix in the tomato purée and passata, then add the sweetener and basil. Fry for a further few mins, then mix in the cream and add the cheese, reserved pasta water and cooked pasta. Serve with the crispy chorizo pieces on top and enjoy!
- 120g dried rigatoni
- 30g chorizo, diced
- 1/2 onion, finely diced
- 250g lean beef mince
- 20g tomato purée
- 200g passata
- Pinch of sweetener
- 5-6 basil leaves, diced
- 40g single cream
- 50g light mozzarella or cheddar
