Ingredients

1onion

1pepper

2garlic cloves

1 tspscotch bonnet
chopped
100gtomato paste
1 ½ tspsmoked paprika
½ tspdried oregano
2 tspgarlic powder
½ tspchilli powder
1 x 400gcan butter beans
drained, drained weight about 240g
100mldouble cream
125mlwater
70gcheddar
grated
oil
to taste
salt
to taste

Instructions
Step 1
In a frying pan over a medium-high heat, add 1-2 tbsp of oil. Once hot, add the onion, pepper and a good pinch of salt. Cook until softened, about 5 minutes.
Step 2
Add the garlic, scotch bonnet and tomato paste. Cook for a few minutes, stir often.
Step 3
Add the spices and cook for another 2 minutes.
Step 4
Add the beans and coat in the spices.
Step 5
Pour in the double cream and water then bring to a simmer.
Step 6
Add the cheese and stir until melted. And that’s it!
