Microwave Sticky Toffee Pudding
Microwave sticky toffee pudding for one 🤤🍮 Recipe below 👇🏽
Ingredients:
Pudding:
50g soft dates (about 8-10 dates)
⅛ tsp baking soda
1 ½ tbs/22.5g hot water
1 ½ tbs/24g melted unsalted butter
1 ½ tbs/16g self raising flour
1 ½ tbs/16g dark brown sugar
2 tbs/25g beaten egg
Butterscotch sauce:
¼ cup/60ml heavy cream
20g unsalted butter
4 tbs/45g brown sugar
Steps:
1. Finely chop the dates and add them to a mug with baking soda and hot water.
2. Microwave for 30-45 seconds. The dates should be very soft.
3. Add melted butter and mash with a fork.
4. Add self raising flour, brown sugar and egg and mix thoroughly.
5. Clean the edges then place in a microwave for 50 seconds to 1 minute and 20 seconds. The top should be firm but not dry. Set it aside to cool.
6. Add all the butterscotch ingredients to a bowl and microwave for 40-60 seconds, until hot and bubbling, then mix thoroughly.
7. Top the pudding with ice cream, custard or whipped cream and drizzle the sauce over it.
